Primal Hot Chocolate

I have never been a huge fan of hot chocolate, but from time to time it is nice.  Many of the ingredients normally in hot chocolate are, however, not allowed.

This is my second try at primal-friendly hot chocolate.

Ingredients

  • 1 cup coconut milk
  • 1 cup water
  • 2 tablespoons cocoa
  • 1/2 teaspoon stevia

Optional

  • 1/2 – 1 teaspoon cinnamon

Directions

Mix the coconut milk and water, then heat (I used a small pot).  In a separate container mix the dry ingredients and try to break up any lumps (easier to break up lumps in the cocoa now than when they’re in the liquid).   Put about a quarter cup of the hot liquid into the container with the dry and mix, making as smooth as possible.  Once mixed, pour back into the pot and mix until evenly-colored.

Observations

This is much better than my last try.  The last time I used twice as much cocoa and coconut milk, and no water.  That was almost chalky in texture, and quite bitter.

This still has a little bitterness to it,  not nearly as harsh as last time.  It’s lighter and has a much, much better mouth-feel to it.  The flavor could use some improvement, and the texture a little.  I suspect a better source of chocolate would make a large difference, cocoa powder doesn’t really break down well to a smooth texture, at least in the time I spent on this.

Overall, becoming acceptable.  Not perfect yet, but better than last time.
